Whether you enjoy your broccoli slaw recipes with a creamy dressing or tossed in a zesty vinaigrette, this broccoli salad/slaw recipe suits both sides of the tasting panel. It looks and tastes creamy, but not in a heavy way, and it carries a ZING of vinegar that freshens each bite and leaves you ready for another spoonful.
HERE'S ALL IT TAKESthis makes enough to serve as a side for 6 folks
- one large crown of broccoli, chopped into bite size pieces
- 1/2 cup natural sunflower seeds
- 1/3 cup dried cranberries & golden raisins (blended to make 1/3 cup)
- 1/3 cup purple onion, finely chopped
- 1/2 cup plain yogurt
- 1/3 cup mayonnaise
- 2 tablespoons cider vinegar
- 1/2 tablespoon sugar
Whisk the yogurt, mayonnaise, vinegar and sugar together in a separate small bowl. Taste for vinegar and sugar, add more of either one to suit your taste.
If you accidentally get too much vinegar or sugar in the mix, just add a tablespoon or two more yogurt to mellow it back.
